Bacon and Mushroom Quiche




250g bacon
200g mushrooms
1/2 tub cottage cheese (I use the low fat one)
2 eggs
cheddar cheese


  1.  Chop bacon and mushrooms and fry in a pan.
  2. Mix eggs and cottage cheese in a bowl until nice and smooth and season to taste.
  3. Once crust is ready place bacon and mushroom evenly on base.
  4. Poor egg mixture over it and sprinkle with cheese.
  5. Bake at 180 degrees Celsius for 30 minutes or until nice and brown on top.



375ml flour
2ml salt
2ml baking powder
100ml oil
50ml iced water
a squeeze of lemon juice


  1.  Sift flour, salt and baking powder.
  2. Add oil, water and lemon juice.
  3. Mix lightly with a fork, shape into a ball and roll out thinly.
  4. Spray a baking dish and place pastry into it.
  5. Prick well with a fork and bake at 200 degrees Celsius for 15 minutes.
  6. Once slightly cooled add filling.
